Yesterday, my husband had potluck lunch in the office. Since I am not such a good cook, a pasta will be the easiest dish to prepare. Here is the recipe of that pasta, unfortunately I was not able to get a picture since I was a little bit late.
Penne Pasta with Mediterranean cod
Ingredients:
Cod Fillet
5 ripe tomatoes, seeded and diced
1 cup black olives
3 tablespoon chopped fresh basil
3 tablespoon freshly chopped garlic
3 tablespoon balsamic vinegar
5 tablespoon virgin olive oil
1 box (1 lb) penne pasta
Salt and Pepper
Fresh feta cheese crumbles for toppings
Classico pasta sauce
Preheat oven to 400F
Bake cod fillet in a baking dish for 20 minutes , covered loosely with foil.
In a large bowl, combine tomatoes, olives, basil, garlic, balsamic vinegar, and olive oil.
Cook penne in boiling salted water until al dente for 12 minutes. Drain. Add Classico pasta and toss. Add tomato mixture and season with salt and pepper.
Put the cod fillet on top and sprinkled with feta cheese.
